Mio's No Knead Bread

Hi people,

here I am with another cuisine recipe I have found it on the web when I've looked for bread recipes. When I have found a rapid and easy one I have told to myself: "This one is for me!". The recipe is called No Knead Bread, (you can find an Italian recipe version on Passione&Cucina )
I call my sort of bread Mio's No Knead Bread because I didn't able to obtain a good result with the original recipe so I have changed the original recipe from time to time. I have felt like the Muffin Man in a Frank Zappa's song :-) .

Let's start with the ingredients:
  • 225 gr. of Manitoba flour
  • 225 gr. of wheat white flour type "00"
  • 280 gr. of water
  • 6 gr. yeast (not the powder one)
  • 8 gr. of salt
Now we can pass to the procedure:
  1. Put in a big bowl, if it is possible with a cover, the two types of flour and salt then mix all together this ingredientes.
  2. Take a big cup and put in it the water then heat it until 30 °C -40 °C then put in it all the yeast then mix with a spoon.
  3. Put all the cup content in the bowl then knead until the dough will be homogeneous and supple.
  4. Cover the bowl and put it aside. The place must be room temperature.
  5. After six hour pour the dough on a work top cover with a thin layer of flour then shaped the dough folding each of the four side to the center (like to obtain a letter from a sheet).
  6. Overrule upside down the dough then cover it with a dishcloth and wait other six hour.
  7. Switch on the oven at 200 °C and put in it the pan. When it will reach the temperature put on pan some bran flour put in it the dough then cove the pan and bake.
  8. After almost 30 minutes you have obtained the Mio's No Knead Bread!!! :-)
Now that the my secret is disclose you can expired YOUR'S no knead bread to changing type of flour (integral, bran, ...), quantity of yeast or everything else.
Now I say good bye because I must go to switch on the oven Mio's no Knead breads are waiting for me!!!

PS: I call my bread with my nickname only because the of ingredients change from the original dose recipe and the rise time with my bread is the half of the original one. I don't want its paternity.

The Power of Music

Hi blogger,
recently I have listen some "old" album. Album that keep me company especially during this last year and before. One more time I have been surprised for the strange kind of magic that the music have on me. (maybe it is the same for you...)
Music, for me, have the funny and interesting property to tie with memories and hide in them like the stars in a sunny day, in apparently there are no stars, in apparently there are only memories.
When I listen music I fly with it, I know that it can seem stupid or exaggerate, I fly though the time and the space on sky painted of piebald or sad memories. Listen music I can see an old friend away from me, I can see myself young, I can feel a sensation that will repeat but not for this is dead. It's is wonderful!
Now I am listening Willy the Pimp in a while I'm in faculty it's evening maybe too late, I have work on my thesis. Now I am listening Yo' Mama it's raining I am alone only a river keep me company with its deep roar. Now I am listening Island, Black Napkins, Watermelon in Easter Hay, Ogre Battle, The End, Manà, Anyway the Wind Blows, 21th Century Schizoid Man, Little Wings, Nuestros Sueños, Cool Cat, Jealous Guy, Quando Sarò Capace d'Amare, a "stupid" cellphone ringing tone... and so on and on.
All this songs (and many others) evoke in me memories that generate sensation trough it I can touch, see, savor, heard, sniff of people, landscape, voices lost in time, space and hearth!
This is for me the great power of music, a good or bad trip in myself down in the deep tuck of memories close to my inner self, close to my pains close to my pleasure!

Memories

Hi to everyone,

it's long time that I would like post some personal thoughts about memories.
What are memories? It is a long period that I ask this to myself more and more times, I have arrived to my personal conclusion.
I think that memories are the most incredible think that life gift us. They are beautiful, unique, perfect and shining pictures that anyone will bring in his mind and his heart like the most loved friend. Memories make you laugh now and will laugh you within many years for their strange and curious thinks, your mind quickly flies through the years and the space on the light silver wings of memories, you can see people, places and feel emotions just closed your eyes. You can escape from this reality to another one. In this new reality you can talk with a friend that is away from you, you can feel the soft caress of your partner's lips on yours, you can remember the place maybe now lost for ever. You can remember the first time that you make love you can feel a shiver down your spine like years ago. You can touch, talk and laugh with people that now aren't by you, some for the strange jokes of life some other because fly away forever. All this things are for me memories but not only this...
For me they are also deep, fresh or ancient, unique, perfect and gloomy scars on my soul I'll bring it in me forever and ever.
They sometimes come to met me, sometimes scream with word of pain to tell me that there are an open wound and they make me travel through the time and the space in place emotion that I would have liked never faded. Sometimes I go to them when the thoughts came to get me to bring me down and down through my soul and with a soft touch them push my hand softly on its scars, then my fingertips touch just for a while the lost world that I have believed forgot.
Memories you are paintbrush that paint plained bright pictures, paintbrush that scratch tender soul. Memories, you are the most beautiful sign that someone have lived, that someone is alive!

Il sergente nella neve. Ritorno sul Don -Mario Rigoni Stern

Salve a tutti,

oddio cosa sta succedendo? Sto scrivendo in italiano? Ebbene sì, il perché di questa decisione che sarà forse isolata, è ben ponderata. Parlare di questo eccellente libro in inglese sarebbe stato usargli una violenza che sicuramente non merita ed inoltre le riflessioni e gli spunti che ha generato in me sarebbero stati difficilmente esprimibili con parole ancora troppo straniere. Ben inteso non che i miei pensieri siano un granché ma sarebbero stati ancora peggiori!

L'avvicinamento a questo libro, se così si può dire, da parte mia deriva da un malinteso che ha fatto si che io arrivassi a possederne due copie, lo stimolo nel leggerlo deriva da un'altra storia ancora... . Comunque sia ero curioso di assaggiare questo libro da molti definito come ottimo e tra i più belli tra quelli scritti da Rigoni Stern e tra i migliori libri trattanti la ritirata italiana dal fronte russo nel 1943.
Prima di tutto vorrei dire cosa non mi piace: niente. Quindi fino alla fine del post sottintenderò "ho veramente apprezzato"! In prima istanza lo stile dell'autore asciutto, semplice, lineare ed immediato. Poche parole ricercate, a tal punto che talvolta sembrano davvero poche, non levano poesia al pensiero, quando riprendi il fiato tra un capoverso e l'altro ti ritrovi nella mente un'immagine fissa e limpida, forse semplice nei tratti ma fisicamente tangibile. La vicenda narrata, derivata dall'esperienza diretta dell'autore, sergente degli alpini sul fronte russo proprio durante la tragica ritirata del '43. Sicuramente per questo ogni momento, ogni sensazione sia dolore fisico che o sconforto psicologico, risultano forti e vividi così come i compagni di sventura, i contadini russi delle izbe l'infinita distesa bianca della steppa russa innevata, la dove come dice l'autore:"Le stelle si congiungono alla terra".
Ripensando a questo libro ho notato una cosa stranissima: posso dire di avere in mente i visi delle persone, dei compagni d'armi anche se raramente Rigoni Stern ne delinea la fisionomia. Sarà forse perché ne delinea, sempre in punta di penna, il carattere attraverso espressioni o comportamenti suscitando in chi legge immagini perse nei ricordi del proprio vissuto diretto od indiretto.
In questa sede non vorrei parlare della trama del libro o dei suoi episodi particolari che hanno suscitato in me sorpresa e delle fonti di riflessione profonda, di questo solamente vorrei parlare. Spero che mi possiate capire.
Indignazione! E' la parola che descrive al meglio i miei sentimenti alla fine della lettura di questo libro. Indignazione perché la stupidità dell'uomo partorisce ancora figli deformi e degeneri come la guerra. Figli che nessuno vuole che poveri donne e uomini devono portare sulle loro spalle, morire per loro, perdere affetti, generare orfani, mutilare gambe e braccia, sfigurare volti. Indignazione perché niente non è cambiato ora succede in Africa, in Medio Oriente, in tutto il mondo così come allora oggi forse peggio d'allora. Ben inteso, non che questo libro mi abbia fatto aprire gli occhi su tutto ciò, ma mi ha fatto capire e forse in parte arrendere all'idea che forse l'uomo ritornerà sempre a comportarsi come la peggiore delle bestie. L'unica bestia dotata di una magnifica sorprendente ragione, la sola bestia dalla quale NESSUNO può scappare quando ragione viene addormentata dall'egoismo, dall'ignoranza e dal denaro!
Prima ho detto: "forse l'uomo ritornerà a comportarsi come la peggiore delle bestie". Ho usato il forse perché in me c'è sempre una speranza o meglio un'utopia. Spero che qualcuno un giorno assisterà al ritrovamento di questa chimera possibile di nome pace. Posso sembrare un illuso sognatore romantico idealista, si lo sono. Ma sono anche realista e la mia speranza viene da delle vicende che sono narrate nella battaglia di Nikolajewka; la dove la la morte si prese quasi tutti i compagni dello scrittore, la dove varcare la porta di una casa, quando all'esterno infuria la battaglia e la pietà non esiste, è come entrare in un mondo di chimere possibili, di sole distopie irrealizzabili!
Oggi come allora il mondo brulica di piccole, grandi, famose e sconosciute Nikolajewka. Lo è stato per noi qui in Europa a qualche centinaio di chilometri dalla mia terra non meno di dieci anni fa nell'ex-Jugoslavia in Europa nel suo cuore! Allora si sono chiusi gli occhi allora fin tanto che si poteva, ma poi il bagliore delle bombe era troppo forte e non si poteva voltare più lo sguardo altrove, anche se troppo tardi! Lo è ora in mille e mille altri posti al mondo, forse non vediamo il bagliore delle bombe, forse non ne sentiamo le fragorose deflagrazioni ... forse qualcosa come allora più di sessant'anni ci fa guardare altrove! Purtroppo per chi conta è così, per chi vorrebbe contare resta il dolore negli occhi, il suono di morte nelle orecchie, un nero pesante cupo sconforto nel cuore! Sì, sono indignato perché sento e vedo, perché non posso fare niente da solo, perché sono consapevole che solo la società può imporre la Ragione su tutto. Sono arrabbiato perché sono forte come tanti altri che condividono i miei stessi sentimenti, e come loro sono imprigionato in un corpo che non può fare niente perché il cervello che lo comanda purtroppo non sta usando completamente la Ragione o forse l'ha già persa!
Lo so ho parlato poco di questo libro. L'ho fatto volutamente, perché deve essere letto e vissuto! Per me è stato un balzo indietro nei racconti dei miei nonni, un balzo nelle espressioni che loro usano correntemente, ritornare ad altri tempi. Posso dire che questo libro ora mi permane nella mente lasciando un lungo intenso sapore di disillusione, speranza. Spero che, a chi come me, ha avuto o avrà il privilegio di leggere questo libro, potrà ricevere almeno un briciolo di consapevolezza in più sulle tragedie umane generate dalle guerre ogni giorno generando una profonda indignazione!
Goya disse:"Il sonno della ragione genera mostri". E' proprio vero, chissà quando l'uomo comincerà a vegliare sulla propria Ragione, chissà!

Stivo Mountain

Hi trekking friends and not,

fall is knocking to our door, wind is its voice sometimes scream sometimes whisper, some threes are frightened and drops their piebald leafs some other try to hang in but soon will surrender to the gently caress of cold, only the rough trees hang in until spring their will bring with their strong harm the heavy touch of snow for gift us soft, strange, bizarre and paled mountain.
... after this bad introduction (in Italian it would have been batter...), I would like talk to you about my last trekking hike, yesterday I was with Nicola on Stivo mountain one of the mountain that encircled Busa and at its foots there is my village. We departed at 7:00 AM from my home to Santa Barbara once arrived after 20 minutes we were ready to went to the top.
The morning was bright, the chilly wind with a cloud paintbrush drew odd shape in the sky the sun of the morning colored of gold, rose and red. It's worth it got up early yesterday!
Soon when we were out of the wood we found the chilly kiss of wind on our face and talked each other about all things that pass through our mind we walked to the mountain top.
After about two hour we were inside the mountain refuge with a warm rum-punch in the hand and a flaming fireplace that kept us a good company! After half hour we felt warm and dry again and we were ready to went down. The wind that before we felt like a kiss become a quite gently slap, but we didn't worth it or batter maybe we pretended that it was not a problem... :-)
After took some pictures we were on the path of return with some sheeps and horses that didn't care of the chilly wind and kept us company. After about one we were at the parking that in meantime it was fulling of cars of lazy or wise hiker (depend of point of view :-))!
Unfortunately the wind had stolen most of all leafs from the broad-leaved trees and the color was lost in field... I'll waiting for the yellow of larch for take some photos hoping that I'll anticipate the wind!
Before leaving you I would like to thanks to Nicola first of all for his gloves without it surely I can't write now! And second, but not in importance order, for the good,bright and smart company! Many thanks Nicola!

2 Fast & Yummy Starter

Hi ladies and gentlemen,
here I am with other cuisine recipe two yummy fast starter that can save you when hungry is big, you don't want cook, your fridge is empty and anyway you don't want the always (in Italy of course) the same pasta or risotto.
Well, let's start with this two simple recipes:

PASTA WITH PESTO ALLA GENOVESE AND GORGONZOLA:


Ingredients: (for two people, if it's possible you might never eat alone...)
  • 200gr. of pasta better if the type is Fusilli or Penne Rigate (I don't know the traslation)
  • 50gr. Pesto alla genovese
  • 150gr. Gorgonzola
Procedure:
  • Cook the pasta in abundant salted water
  • When the cooking is over bolt down pasta and put it again in the pot the pasta then add pesto alla genovese and gorgonzola with a very little bit of butter then mix all together keeping fire low
  • Serve it, if you prefer, with grated grana


RISOTTO WITH PESTO ALLA GENOVESE AND GORGONZOLA:

Ingredients: (for two people, if it's possible you might never eat alone...)
  • 150-200gr. of rice
  • One little onion
  • 50gr. Pesto alla genovese
  • 150gr. Gorgonzola
  • 50gr. of grana
  • Little bit of butter
Procedure:
  • Cook the rice like a traditional risotto
  • When the cooking is over, after about 13 minutes, put in the pot with risotto pesto alla genovese and gorgonzola with butter and grated grana then mix all together for two minutes be careful you must turn off the fire.
  • Serve it, with if you prefer, add again grated grana
I hope that this two simple recipes will aid whenever you don't know what cuisine and your fridge is sad like your humor! I don't know where this two recipes come from their aren't a mine creation anyway I would like apologize with all genoa's people for the violence that I had suggest in this post on their magnificent sauce!

I aware that isn't a little or rather is all but this is my personal way to live LOVE!

New Mio's Blog Layout

Hi to every one,
finally after many troubles I realized my personal layout page. I have started from a Demin template and added a new left column like I have found in Internet at this very good blog [1] than I had added some new widget, tips and personal option like the possibility to change some blog's color part. I am not completely satisfied of my work but it is quite near to my definetive project please waiting a little bit! Then you can consider this my new template like a beta version that will be the official also with YOUR APPRECIATE advice and opinion!
I had insert a translation tool improved by Google which translate from English to your own lenguage, I had insert the most popular languages I apologize if your is not present!
Italian's blogger that read my post can think: " Finally he will start to write in Italian, and I understand what he does mean!". Sorry, my terrible English will keep still company! Sorry... :-)
Moreover, I think that this new too will be a new entertainment internet-toy with you can laugh about the English-to-Italian translation seeing my wonderful mistake! Anyhow, when I'll write a post in Italian the not Italian people can translate it to English and than to their own language (I think that this trick will work) and maybe you understand batter than when I write my English post!
I hope that all new widgets, links and everything else part work well, if it isn't please tell me! Please tell me all ideas that you have for customize my new layout! If you like to use it you can find my HTML code here.

I hate crunch!!!

Hi guys,
I've got a terrible backache and I walk like Robocopt with the only difference that he didn't use the crunch! Yesterday was a beautiful day for went out and took some autumn pictures of this wonderful color and took a deep breath of fresh mountain air and ...!!! Sh...!
I will feel batter next week and anyhow there will be others goods days for go out we are just in fall!

Studio Tan - Frank Zappa

Hi bloggers,
here I am with a new album experience, a "new" Frank Zappa's album; Studio Tan.
This time like the last one (remember?) I am quite let down of this album. Like the last time I haven't found songs that have excite me! Maybe now it's time to take a pause (very little) from FZ for dedicate to other good musicians.
Camed back to Studio Tan, this album is compose of four songs:
  1. "The Adventure of Greggery Paccary" – 20:40
  2. "Revised Music For Guitar and Low-Budget Orchestra" – 7:36
  3. "Lemme Take You To The Beach" – 2:44
  4. "RDNZL" – 8:12
This structure in term of length of songs, especially the first one, may put away you from the "endeavour" to continue to listen this album but hang in there, with Frank you can find always some precious strange song. I had found one song that I have appreciate and it is the last one: RDNZL. It is an instrumental song that I had found particular and vivid in its structure that it isn't complex. The song's structure is a uninterrupted change of themes and instrument too with frequent change of execution time... very "particular" song!

Trentino Strudel

Hi to every unpaid cooks (like me),

It's a fairly time that I don't post a cuisine receipt then here I am!
This time, like the last one, I will suggest you a secret Miorelli's family receipt the G.'s strudel (Is my grandmother). The very first strudel that I had ever appreciate!
First of all let's start with ingredients for the compound, that will bring to a pastry called pasta matta (crazy pastry), and the strudel: (For two strudel)
  • one egg
  • one spoon (of soup) of sugar
  • about 300 gr. of flour
  • one spoon (of soup) of olive's oil (better if it is extravergine)
  • about 15 cl. of milk
  • a little bit of salt
  • walnut or pine nut (quantity to your taste)
  • currant or raisin (quantity to your taste)
  • about 1 kg of apples
  • cinnamon or grated rind of lemon
  • little bit of grated dry bread or dry biscuit
Let's pass now to the procedure:
  1. Whisk in large terrine or bowl with a fork egg, salt, sugar, milk and oil until the dough is "homogeneous"
  2. Add flour (not all 300gr.) until it became rather compact. It must remove by itself from the bowl then put the dough on a worktop it with flour until it do not stick on it. Now you have obtain the pastry!
  3. Cover it with the bowl at least 1-2 hours
  4. While you are waiting skin the apples and slice it then cover with two or three spoon of sugar then take the walnuts mince it
  5. Take the pastry and divide it in two equal pieces then with a rolling pin stretch it. The shape must be circular one. The compound must be thin! thinner it is better will result the strudel!
  6. Put a little bit of dry grated bread on the stretch pastry and then take the apple's slice hold and drip it then put randomly on it the pastry must be almost cover; add walnuts, raisin and cinnamon
  7. Roll on itself the "thing" :-) obtained in 6. until it is completely off then put on the top a little bit of butter then take it and put in oven for 30 minutes at 160 °C
  8. If do you like, when it's going to be cold, put some icing sugar.
  9. Finally you can relish your work of art's cuisine!!!
I hope that I was clear in this pseudo cuisine receipt, I will be helpful for any clarification! Right now I thing that my strudel is over... this afternoon or this evening I'll do it thus my tomorrow morning will be more sweeter!!!

Altissimo Mountain

Hi bloggers and not,
this morning I get up early like every day and with my cup of coffee and milk I go out on the balcony I stayed there for three second because I felt a the chilly morning air bite my face. I remember this summer in the early morning when it was a pleasure stop me there and listen, observe and think... now the woods are becoming red, yellow and brown maybe the woods feel ashamed because know that within few days it will be naked; some birds are departed for search warm place to sped their autumn and winter, the sun is becoming more shiny every day more showing its face little bit late day by day the autumn is coming!!!
Thinking at this season mutation I would like post you the impression that I had last Sunday when with Nicola and me went on Monte Altissimo a mountain above the Garda lake where you can enjoy the beautiful view of the meridional part of Trentino-Alto Adige. (Busa included).
We departed above Nago and took a dirt road in the wood after thirty minutes of walk we were in green field with the gently sun of the morning that keep us a good warm company. We were chatting walking and observing all around the nature the place and after one hour we were on the top at mountain refuge D. Chiesa. Here were waiting us the traditional trekking's tea with alcohol or not only its hot flow through the throat it's a pleasure and a incentive to go out again if the water isn't good!
After a while we was out on the mountaintop enclosed to the beautiful ring of mountain and lake here some photos were duty! Then we were ready to come back home. We decided to took a new path for come back and since I always trust in Nicola (although we are lost again) I followed him like a blind person follow her dog... unfortunately my dog was blind too (:-))... we were not lost but we were out of the path among mughi (type of pine's three) only a "brave" and funny downhill trought this sort of wood we'll bring us to the right path. After thirty minutes some falls and many scratches we were down on the right path now we must went up again for took the path that will brought home... we had got change the name of the mountain from Altissimo (highest) to Lunghissimo (longest), we were the only people at world that were able to extend the downhill more than the climb!!! But doesn't matter because I understand that Nicola is not an excellent orientiring compainion but I know that a third time I'll follow him anyway because I know that I'll enjoy! :-P
Finnaly we were at the car ready to lunch ready to seeing the pictures (unfortunately not mine because my digital camera doesn't work!!!!).
I would like to thanks to Nicola for the tour and especially for the funny deviation (:-)) but more for her company! I advise anyone who will came in Busa to go on Altissimo and if you will take a special short cut contact me, I'll talk with pleasure to Nicola, he always will find one for you!!!

Tremalzo-Pregasina

Hi dear reader that endure my posts,

the autumn is knocking at the door and I would like tell you my last tour in mountain bike that was the 9th of September. I don't recount it before because I haven't time to write this post therefore the landscape aren't seem the same but what I find during this tour is still alive.
My tour with MTB started from Arco on Sunday morning I went to Riva del Garda were I took the old Ponale's road, it is an characteristic and panoramic road cut in the rock sheer on the Garda lake, at the end I arrived in Ledro's valley that is a green plateau full of pine tree, fir and green field with an characteristic small lake (Ledro's lake). At the end of Ledro's valley I took the road that rise toward Tremalzo. After 13 Km and a lot of fatigue I arrived at the top at about 1800 mt. of altitude in the middle of green field full of cows that were waiting for return to valley. Unfortunately daytime was not very bright and the landscape was not the maximun but a warm sun heated me softly while I had my packed lunch. After some photos I was ready to return home I had decide to went home pass through Pregasina by a new (for me) road that I knowed exist but I haven't never explore.
After 10 minutes I was on the Tremalzo's pass ready to deep down for about 10 Km on a quite technical dirt road with galleries that brought me from a landscape to another one passing through its gloom throat. I arrived at the crossroad to Pregasina full of curiosity for what expected to me I knew that from this dirt road I arrived to Pregasina and I could saw the Garda's lake the Busa (remember?) but I don't knew how!
After 2 Km the dirt road became a path into the wood and rocks unfortunately the path become to go up and in very MTB style I carried my bike on back up in the wood until Guil pass then I go down through a down hill path and at the second fall I dicide that my shoulder, neck, head and knee count more than my pride and obstinacy! At the end of the path, wood, rocks and fall I followed little dirt road that carried me to an incredible beautiful and unexpected panorama. I was (I know it after) that I was on Punta Larici all the wonderful Garda's lake was in front of me, the Busa on my left with a gently wind caressed my face. I decided to stop there for a while to take some pictures and enjoy the moment completely. With a little bit of sadness I returned to my bike and rode to Pregasina and then to Ponale. After 20 minutes I was back home.
I learn something or batter understand something from this trip, I understand as in this trip the magnificent and incredible view is unexpected near to me so in the life something of precious and special can be near to me and I can see it just taking a "bike". Now I know were is Punta Larici, now I hope to know many other "Punta Larici".

Torri del Latemar (Latemarturme)

Hi to everyone,

last Sunday I had my first trekking tour on Dolomiti, I was to Torri del Latemar the translation if it exist is very horrible then I'll bring this name. I apologize with all no Italian blogger.
Someone can think: "This guy is 26 years hold he came from Trentino-Alto Adige and had never been on Dolomiti. He is little bit strange...". I am agree with you and in "strudel-thinking" last week I decided to try this experience.

I departed from Arco at 6 P.M. with the Arco's S.A.T. group destination Obereggen, about at 9 P.M. we was on chair lift the that brought us at 2000 mt. at the foot of Corno d'Ega ready to go to Torri del Latemar along the path number 18. After about two hours everyone decided if do the normal path, that pass at the foot of Torri del Latemar or do ferrata's path. It is a path that run along the top of the mountain where to secure yourself you must hook to an steel rope. For curiosity and for try a new experience I chose ferrata's path. After about two hours of ferrata we arrived at the match point where we had a packed lunch at bivouac M. Rigatti at 2600 mt. of atitude in the middle of Dolomiti with a beautiful landscape that brightened the eyes an the spirit under a gently sun and a soft fresh wind that recharged me. After half hour we were ready to go to the mountaintop the Schenon at 2800 mt. of altitude. After two hours of climbing-walking we are on the path that bring us to Costalunga pass where we find all together to eat and drink. At 20 A.M. we arrived at home tired but surely nobody was bored.
Especially one think of this trip remain in me and it is the noise-sound of silence, it is something of fragile and heavy something that enter in me by-passing heard and resonance in me with extraordinary magnitude like the time when I was to sea in winter a while time ago but this is another story...
Unfortunately now the season is not the best for this type of excursion maybe is over but I'm sure that next year I try new ferrata's path and way not if I'll be the opportunity I would like to do a climbing course for live the mountain in his (the mountain for me is like a woman) complete spirit always with respect always listening his voice always speaking with his in silence.

Freedom

Hi people,
it's a long time that I ask to myself what is freedom and if really exist and it's a positive thing. This statement can sound strange (me too) but I think it's not fool, now I'll to explain you why. Already I know that it'll be very hard explain it in this foreign language because it's the same in Italian I'll attempt to be as clear as possible.
The fundamental question is (for me): "What is freedom?"
I think that freedom can be divide in two fundamental categories: Social Freedom and Personal Freedom. In my way of think both are present in every person but aren't the same and I can't considered its positive.
When I talk about social freedom I think to freedom that belong to every one, freedom in thinking, speaking, living, moving and all that think that permit to society to express their wish without any coercion that came from the society too, that it's different to the concept of democracy here I don't talk about politic. Therefore for me the social freedom is objective positive concept that every society can follow and conquest with their pacific (I hope) battles&revolution.
The personal freedom it's for me another think because it bring to different consequences on the person that deal with it. Now I try to propose you my point of view and I attempt to organize a objective reasoning but until now I know it's a claim fairly impossible.
First of all I think that personal freedom it's a personal concept that can be negative. Indeed my concept of personal freedom is surely different from many other personal freedom concept (this remark can extended to anyone). For me freedom is as had tell De Andrè: "Una prigione senza confini" the English translation is: "A prison without borderline". This because I feel in trap for two reasons that can be resumed in two question: "If I want to use my personal freedom I hurt someone else in every way?" and the consequential lemma is: "Can I private myself to freedom to do something just for this?". I know that now the discussion it's append on thin line of personal opinion, therefore now try to give you my answer that I hope will be objective as possible.
I think that in general there isn't the good and the evil but exist the right and wrong, I know that both are personal point of view but I feel it in different way, I feel right and wrong like an objective think because their answer to the question: "Its my behavior the same that i would like that someone else use to me?", I know that in this thought there is an apparent a contradiction but it isn't so. (I know that I am not clear. Sorry).
Anyway returning to personal freedom, I think that if I use it I can hurt all the people that have deal with my research of freedom. Therefore which type of freedom is this? Surely not a good one and therefore it's better that it not belong to me! Therefore I am not free? Yes certainly. I know that I live in a beautiful "prigione senza confini"! And you? Where do you live?

Eeat Right 4 Your Type -P. J. D'Adamo

Hi every hold&new visitors,
last week I finished to read my last book: "Eeat Right 4 Your Type -P. J. D'Adamo" (italian title is L'Alimentazione su misura -P. J. D'Adamo), this book talks about the correlations that exist between the blood types groups and the food in general.
First of all, you should know I'm a very suspicious and diffident person toward all things that pretend to talk about science and don't use a scientific-like approach; maybe this come from my education, perhaps is just my way of thought... it doesn't matter.
However let's return to the book. In the first part D'Adamo talked about the history of blood types groups, he explains the differentiation that has brought to the actual family of blood types groups came from the genetic mutation that the environment cause to the people that living in. I fact we can associate to a determinate environment a determinate geographic configuration, climate and consequently types of plants and animals included the human race. All this aspects (and more other) has caused the differentiation that still now belong to our genetic patrimony and tell apart a person to another that haven't the same blood group. This distinction can be summarized in three fundamental points:
  • Interaction between food and human organism;
  • Personality;
  • Way of life, intended like ratio between psychic & body.
This leads the author, in the second part of the book, to formalize a theory that want associate to a determinate blood type the right diet and a correct physical and/or psychic exercise for improve at best the potentiality of a person and secondary (for me) for diet loss. In this part D'Adamo drafts a detailed list of foods that a person who have a determinate blood type can or can't eat. After classified the type of food in macro-groups like cereal and derivate, fruit, vegetables, milk & milk products and eggs, spice etc. He divides the foods in three categories: beneficent (they have a positive effect on the person it's curative), indifferent (they haven't a particular positive or negative effect), to avoid (they have a negative effect on the person bring bad effects). At the end of the second part, D'Adamo suggests for each group a particular scheme to improve the psychic-physic exercise that a determinate person (associate to a determinate blood type) should follow for express at best own capability.
In the third and last part of the book, the author conducts an analysis that shows the relation between a variety of diseases and the blood type, he integrate this part with clinical cases that he has studied during his career.
I must confess that this book intrigue me to such point that I'm going to apply on myself for a period this type of diet in order to see if it works or not. Actually I must tell this diet for my blood type group don't bring a huge changes in my delicatessen habits. We'll see!

Dolomiti tour

Hi to every bloggers and not,

after years and years of geographic ignorance the last weekend of august Ihad decide with my friend Cladio to explore the oriental part of Dolomiti that are the most characteristic and rapresentative highland (my personal opinion) of my region, Trentino - Alto Adige (Sudtirol).
There are fundamental two ecological way to visit this beautiful once is walking and the second is by bicycling. We had choose the second one.
At 9:45 AM after two hours trip we arrived in Corvara a small and nice village in Sudtirol's province, at 10:00 AM we rode our bicycles toward our personal challenge indeed we had decide to do the medium route of Dolomities Marathon.
Fortunately the weather was excellent and our mood was batter although we knowing that on our route we will find six Dolomitic's pass and four of it with more than 2100 meter of altitude. Anyway with a good company all trip can be easy and I had three excellent partner, Claudio, the wish to confront with me on that epic climb that had make the history of ciclyng and the beautiful landscape that filled up my eyes.
I was like an young child that was impress to the peachy beauty of those enormous and monumental rock's colossus that was suspend between green soft field and the blue sky dreaming ploughed to funny clouds. It was bliss.
At the evening after six long hours of pedal and eight trip's hours we arrived happy and tired to Corvara again. With a short briefing we had decide to enjoy the local cuisine and better if it's the typical one, then after dinner we return happy and tired to home with in our eyes the magic atmosphere of the unforgettable, precious and dreaming Dolomiti's rose sunset!

My home: "La Busa"

Hi girls and boys,
I had think that it's a pretty good idea show you same place that belong to me (in the large meaning of the word) to make known you some quite distinctive place in La Busa and surroundings.
First of all: What is "La Busa"?
La Busa (a very bad and impossible translation is the hollow) is the dialect name that identified the place where I live. It came from to the shape of valley that have an characteristic shape. I can describe it to you with a strange-bad example: you can imagine to have a plate of boil rice and take a spoon than excavate a quite big pit/hollow in the mountain of rice, well now you have an idea Busa's shape, where there is a large plain that born from lake (the north side of Garda Lake) and it's encircled by mountain. I am sure that no one will understand my description and I am sure that my fellow citizen are smiling or thinking this guy is fool... I don't care! :-) (Anyway, for a formal and scientific person La Busa is an glacial-origin valley).
The most important characteristic of Busa is her climate, indeed also being in the italian's Alp and near to the Dolomities we here enjoy a Mediterranean's climate (we have lemon, palms, olive tree...).
Moreover in the Busa you can enjoy with a lot sport activities like mountain bike, windsurfing, climbing, trekking, parachuting and more and more.
Now for making appreciate you the Busa I'll insert in this post a picture-link that bring you to an album that collect photos that came from places that overlooking on it. I'll try to update it more frequently that I can.

Tiramisù

Hi ladies and gentleman,
yesterday I thought that it should be a good idea (or better isn't a bad idea) insert a new section dedicated to my preferred recipes. Some of this recipes are my creation and reprocessing, I can't guaranteed on result in taste and appearance I just tell about it that I like it and nothing more. Anyway I start with the TOP SECRET dessert recipe of my mother's family, the TIRAMISU'. This recipe pass from mother to daughter since three generation and always the result preserve its incredible magic taste. With my description I hope that you reach the same result!
Tiramisù's ingredients for four people:
  • 6 eggs
  • 1/2 Kg of mascarpone (is a type of cheese)
  • 6 spoons of sugar
  • 4 cups of coffee
  • savoiardi (are a type of biscuit)
  • a little bit of marsala (is a type of wine with a high alcohol degree 20°/25°)
  • cacao powder
  • plain chocolate
Preparation:
  1. whisk egg yolk with sugar in a large bin until the cream will appear bright
  2. whisk egg whites in another large bin until it will be whip up
  3. add to the cream t obtained at point 1. mascarpone and whisk every time
  4. add & mix to the cream obtained at point 3. egg whites obtained at point 2.
  5. when the coffee are cold add marsala whisk a little bit than soak in it savoiardi
  6. put savoiardi at point 5. in a large and high bin (about 10-15 cm), when the bottom are full of savoiardi put a layer of cream that had make at point 4.
  7. put little piece of plain chocolate randomly on the cream
  8. repeat point 6. & 7. until the cream is over (the number of savoiardi's layer depend on bin's dimension in general are more then two)
  9. cover the last layer of cream that you had obtained at 7. with a little bit of cacao powder
  10. put tiramisù in fridge at least for two hours then you can be serve it. An alternative that I prefer it is freeze tiramisù, then put it out freezer and serve it about 1/2 - 1 hour later (it will be a little bit freeze but not complete)
That's all folk, I hope that my receipt is clear and I have stimulating your cousin/culinary curiosity. I don't guaranteed nothing on result but if you have an hour free or outside there are the Flood I can gamble that after two hours your time will be more and more sweet!

I like strudel with apples

I know that this is (maybe) a strange title for a post, but I hope that at the end it will be clear and this choose.
First I want to explain what a strudel is. It's a characteristic dessert of my region (Trentino Alto-Adige), it come from Austria's cuisine. This dessert is made of apples, raisin, cinnamon and pine nut all this ingredients are roll up in a puff pastry or a pastry in general than it is cooked in a oven (I know that this is the worst cuisine-receipt that you had ever heard so I insert a photo for recognize this mysterious dessert).
Since I was young I dislike the strudel with apples, I don't know way but I had never eat it spontaneously. Last week I been on the top of apple tree for piking up the fruit and I think to myself now I would like eat a slice of strudel. The evening when I come home come to meet me my grandmother with strudel I taste the strudel without think if I like or dislike it, but only with wish to try its taste that I had never taste. It was very good and now I like it.
Know I ask to myself why I hadn't never taste the strudel? The answer is simple and disconcert (for me) and is I DON'T KNOW!
I have had always think that I'm an open-minded guy that have an multilateral thought, I had believe that I be able to put in discussion every personal opinion, choice, idea and thought but in reality I lie a little to myself.
Know I think that life hide good surprise and bad joke every day. I think that the only way to accept it is try to farm a relativity of thought nothing is firm so I must move with-it otherwise I'll be firm and my only answer it will be "I DON'T KNOW". I can't permit this to myself!
Now I think that I have reached a "new level" of awareness and this awareness belong to me like a present that the life had give me, maybe late but surly well-accepted. Someone can ask me why do you awake only now, but this is another think and different story.
With this post I don't require to give life-lesson to someone (I not be able) but I want make you this question:"Which is your answer to every thinks that you had have never taste only for a mind barrier?".
My answer is: "WHY-NOT?". I know this is a question but for me enclose the way to grow up and go on every day.

Sleep Dirt -Frank Zappa

Hi guys,

with this new post I would like to open a new section dedicated to my recent listened music. It's not my wish indicated an objective point of view or an absolute assessment, but just indicated my opinion about this or that album rather this or that song.
Anyway, here we are Sleep Dirt, among Frank Zappa's album that I had have listen until now (all the FZ's album in chronological order until this one) this is album explore new contest that it doesn't belong or find in the backward album. Here we find a complete or almost complete instrumental album (this in not a news) but the atmosphere is new. I can't describe it, it is free almost fresh like an immediate drafting. It's not (for me) an elaborate album but the FZ's style is present in every song.
For me the best songs in this album are basically two: Filthy Habits, Sleep Dirt. If you don't appreciate this two songs hardly you will appreciate Sleep Dirt (I fairly appreciate this two songs therefore...).
I would like underline again that this only my poor opinion! Whatever Frank Zappa deserve always an listening!

Malga Campo - Vallestrè

Hi,

finally after troubles with my camera and terrible psico-physic fight with an horrible software, I'm very glad to present my first official post that collect last weekend tour on the mountain quite near Arco. It's a funny-hard trip but the beautiful of nature and the freshness of the mountain air (in conjunction with a good cheese form) it had became very light. Anyway, I hope that you will enjoy my photos because in the only material thing that I can offer you (the cheese was very good!!!).
